St Patrick's DayIn Ecuador we don’t celebrate Saint Patrick’s Day as in the US or Europe. In fact, the first time I heard of this celebration was when I lived in Japan and the foreign community organized a parade.

St. Patrick’s day is celebrated in March 17th, and it’s also the National Holiday of Ireland.

Apparently nothing to do with an Ecuadorian, but as a homeschooler I think this is a great opportunity to learn about this far away country and eat a bit different.

So we’ll probably be preparing some of these recipes that day and look for books on Ireland as well.
